A blend of 13 Alsatian grape varieties, grown on granite, grey and marl limestone, in the villages of Kaysersberg, Ammerschwihr, Zellenberg, Rodern and Ribeauvillé. The vines are farmed according to the principles of biodynamic viticulture. Manual harvest and controlled yields. Vinification: direct pressing, transfer into old barrels so fermentation and maturation for a year on lees. Bottled on the 29th of September 2024 without fining nor filtration, just a micro-dose of sulphur (added at pressing).
JÉRÔME FRANÇOIS
Jérôme François settled in Ostheim in 2014. The young carpenter couldn’t resist the call of the vine and started his estate with a few plots from his grandfather and the barn of his great uncle! Late 2017, Jérôme teamed up with Yann Bury. The man grows his vines biodynamically, and works the soil not with a tractor but with two horses, Sirus and Fastochex. A flock of black Ouessant sheep...
