100% Pinot Noir from old vines farmed biodynamically and planted on sandy soils over a granite bedrock, halfway up the Schlossberg hillside, with a steep slope. The grapes are harvested by hand picked at maturity, then vinified with respect: fermentation with indigenous yeasts, cold maceration for about 10 days with 50% of whole bunches, followed by 10 days of classic maceration, 24 months of aging in barrels : 85% of barrels that have seen two to four wines, and 15% new oak.
