100% Riesling from vines grown biodynamically, certified by Ecocert and Demeter, planted on the Clos des Capucins and the adjacent vineyards, on a gravel, sandy loam terroir on a bed of pebbles. Flat terroir at the entrance to the valley, protected from the wind by the surrounding hills. Manual harvest at maturity. Vinification: gentle pressing of the whole bunches, fermentation thanks to the indigenous yeasts, 10 months of aging in casks that have seen several wines.
