This 100% Riesling cuvée is made from 60-year-old vines farmed biodynamically and planted at the top of the Schlossberg hillside, at an altitude of 400 metres, on shallow sandy soils over a granite bedrock, facing due south. The grapes were harvested by hand at maturity and vinified respectfully: gentle pressing, fermentation with indigenous yeasts, and maturation on fine lees for 14 months in large casks, without stirring.
