100% Gamay from 60-year-old organic vines planted on the Les Charmes single-plot, with a terroir mixing white granit and red schists. Manual harvest, with yields around 35 hl/ha. Vinification: in whole bunches, carbonic maceration for 18 days, fermentation with indigenous yeasts. Soft pressing, 10 months of aging, 75% in old casks and 25% in vats. Bottled at the estate without fining or filtration, just a micro-dose of sulfur at bottling.
