Les Sarments - 2022 - Pauline et Édouard Cazals
Les Longues Vignes

A blend of organically-grown apples and pears from the estate's own orchard, supplemented by pears purchased from Domfront in Normandy. This is the base of the Siéversii cider, to which the winemakers have added around 15% of the estate's Chardonnay and Grolleau juice at the end of its fermentation. Natural startinng of fermentation, bottled early February 2023, three months on laths, disgorged early June. Unfiltered, just a micro-dose of sulfur coming from the grape juice.
