100% Aligoté doré, old vines from a massal selection, farmed biodynamically and planted at an altitude of over 400 meters in the Hautes-Côtes slopes, this is a blend of several small plots with a great diversity of soils, marl and clay on limestone slab. Harvesting was done by hand at optimum ripeness, vinified in 228-liter barrels and vats, aged 12 months on lees without new oak, then a few months in vats before bottling. Not fined or filtered, sulfites are carefully controlled.
Boris Champy
Boris Champy, a child of the 1974 vintage, is at the helm of his eponymous estate in Nantoux, in the Hautes-Côtes-de-Beaune region. The winemaker's background is nothing short of admirable: originally from the Champagne region, he worked in Napa Valley for 10 years before becoming technical director of Louis Latour and then manager of Clos des Lambrays for many years.
