100% Pinot Noir from organically farmed vines in the village of Saint-Bris, Yonne department, between 210 and 250 meters of altitude, planted in clay-limestone soils. Harvesting by hand. Natural vinification: around three weeks of maceration of the whole bunches, in wooden tronconic vats, aiming for gentle infusion, with only light pump-overs and punch-downs. Aged for 18 months in Burgundy barrels that have seen several wines. Bottled at Château de Béru without fining or filtration, with just a micro-dose of sulfur.
