100% Pinot Noir from old vines (some over a hundred years old!) planted on three parcels in the lower part of Volnay, totalling 70 ares: Les Longbois, Petite Condemaine and Les Vêves, a clay-limestone terroir with South-East exposure. Hand-harvested at optimum phenolic maturity, 10% whole grapes, approximately 20 days of maceration, pressing, then 12 months of aging in 228-liter Burgundy barrels, with 30% new oak. Bottled without fining or filtration, sensible use of sulfites.
Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
