100% Chardonnay from 33-year-old vines grown in sustainable farming and planted in the middle of tis legendary Grand Cru, at an altitude of 325 meters, very steep slope, West / South-West exposure, on silty and chalky soils. Manual harvest in small crates, two sorting of the bunches on table. Vinification: indigenous yeasts, punching down and pumping over adapted according to the daily tasting, soft pressing. 12 months of aging in barrels with 20-25% new oak. Blending during four months, before bottling at the Estate, without fining.
David Croix
David Croix is at the head of the Domaine des Croix, located in the heart of Beaune. Originally from Montlouis-sur-Loire, the young guy knew from the age of 16 that he wanted to make wine, and therefore started a journey to become an oenologist. He went through the viti-oeno diploma in Tours, before leaving for Burgundy where he graduated from the Master of Oenology in Dijon in 2001. He...
