100% Pinot Noir from 45 to 60-year-old vines, organically farmed and planted on Cassiopée's largest parcel—80 ares split into four blocks surrounding the Aligotés. Harvested by hand and natural vinification: total destemming, gentle maceration, 20 months of aging (80% in casks that have seen several wines, and 20% in Tuscan clay jars). Bottled in May 2024 without fining or filtration, with only a micro-dose of volcanic sulfur added (1 gr/hl).
Talloulah et Hugo Mathurin
Talloulah Debourg and Hugo Mathurin, children of the 1994 vintage, studied oenology in Bordeaux. Yet if Bordeaux was far from their favourite wine, both were deeply drawn to Burgundy, where the winemaking philosophy closely matched their own. Hugo went to Domaine Roulot, then spent two years at Domaine Mugnier. As for Talloulah, she started at Clos de Tart and ended up with Marie-Thérèse...
