Gamay grown on a terroir with a slab of pearly limestone with crystals, veins of black manganese, and almost no soil between 5 and 50 cm. From vines planted in 1953. The estate was certified organic in 1954 and biodynamic in 1998. Grapes are harvested by hand, with sorting in the vineyard and on tables when necessary. Vinification: semi-carbonic with whole bunches, maceration for one month, matured in barrels for 12 months + 3 months in vats. Unfined, unfiltered, without any addition of sulfites.
Julien Guillot
Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001.
