This Pinot Noir cuvée (which includes 15% Pinot Beurot, an old Burgundian grape variety) comes from a parcel of century-old vines grown according to the principles of biodynamics and planted on deep clay soils. Vinification: grapes are harvested in whole bunches then partially destemmed, foot treaded, followed by a 15-day maceration, fermentation and maturation over 14 months in oak barrels that have seen several wines. Bottled at the estate without fining or filtration, just a micro-dose of sulphur.
