Pinot Noir from organic vines planted in 1929 on a south-west facing slope, a parcel of 0.16 ha at Les Vermots climat, with clay-limestone soils. Harvested by hand on the 27th of September 2021. Vinification in whole clusters, cold maceration for three days before fermentation, followed by a long maceration with some punching down, 12 months of aging in barrels, then 8 months in vats. Unfined and unfiltered, bottled on the 15th of May, 2023 with a micro-dose of sulfur (total SO2: 21 mg/liter).
Seiichi Saito
Seiichi Saito is the winemaker at the head of Domaine Petit-Roy in Chorey-lès-Beaune. Born in China, he moved to Japan with his parents at the age of 11 to join his Japanese grandmother. A wine enthusiast who has always wanted to work in nature, he hesitated between Bordeaux and Burgundy when he arrived in France in 2005, but his passion for Pinot Noir won out.
