Complex, delicate nose of apple and pear, brioche, hawthorn and candied lemon. Mineral and ample on the palate, this is a very beautiful, vinous Champagne with fine bubbles, both crystalline and enveloping, with a long finish.

100% Pinot Meunier, a cuvée made from grapes purchased from vines planted in Chavot-Courcourt on very poor soils of outcropping chalk and hard limestone. Exposed to the North, the terroir is similar to that of the Côte des Blancs. Hand-harvested and vinified naturally in stainless steel vats. Zero dosage and zero sulfites added throughout. Aged on laths, disgorged in January 2024.

Fabian Daviaux, child of 1987, is at the head of Champagnes Chavost, a unique cooperative that produces organic and natural champagnes and brings together a dozen families from the village of Chavot-Courcourt.
