50% Chardonnay and 50% Pinot Meunier from organic vines planted on north-facing clay-limestone soils. Harvested by hand at advanced ripeness. Vinification: grape must and pure alcohol for the mutage, and nothing else! No vintage, as this ratafia has been aged in barrels using the Solera method since 2018. Unfined and unfiltered, bottled in April 2024 without added sulfites.

Fabian Daviaux, child of 1987, is at the head of Champagnes Chavost, a unique cooperative that produces organic and natural champagnes and brings together a dozen families from the village of Chavot-Courcourt.
