A rosé Champagne with notes of tart red berries, a candy/treat for adults. Very fine, delicate, on a spicy profile, already evolved. It is complex and at the same time really digestible, like it's obvious in the glass and on the palate. One of our favorite discoveries.

Vintage Champagne, 2/3 Pinot Noir and 1/3 Pinot Meunier, from the vines of the cooperative Chavost: 40 ares of Pinot Noir and 40 ares of Meunier, the plot faces North and shows deep, heavy soils. Short Guyot pruning. Harvesting is done by hand, with a sorting directly at the plot and again in the winery. Two and a half days of maceration, vinification in 500-liter barrels that have seen seven wines. Bottled in February 2023 without dosage or any addition of sulfites, aged on laths, disgorged in January 2024.

Fabian Daviaux, child of 1987, is at the head of Champagnes Chavost, a unique cooperative that produces organic and natural champagnes and brings together a dozen families from the village of Chavot-Courcourt. Born to winegrowing parents, the adventure began very early, but it bored him. He wanted to be an oncologist, so he studied biochemistry... and finally became an oenologist in 2010! He...
