Cuvée Sarah - 2020 - Simon Giacometti
Domaine Giacometti
Powerful nose carried by notes of candied cherry, undergrowth, a slight mineral touch... The palate is dense, tannins still well asserted, long finish on red plum. Interesting decanting, 30 minutes before tasting.

A 100% Nielluccio cuvée from organically grown vines planted on granitic soils in the village of Casta, North of Corsica. Manual harvesting. Vinification: total de-stemming, 15 days of maceration in stainless steel vats with daily pump-overs, blending of the free run juice and the press juice. After malolactic fermentation, the wine is placed in demi-muids that have seen two to seven wines for 12 months. Finally, 11 months of maturation in stainless steel vats before bottling at the Domaine. Not fined or filtered, just micro-dose of sulfur.
