In Stefano’s words: "A wine that’s rustic and wild in its youth, yet becomes an elegant gentleman as the years pass." Today this 2007 is splendid, with undergrowth, leather, black fruits... The tannins have softened but are still well structured, with a long finish, a wine to meditate on.

100% Nibiô, the local name for Dolcetto, which has been cultivated in this region for over 1,000 years, from 60-year-old vines grown biodynamically on clay-limestone soils, hence terre bianche or white earth, on the label. The vineyard faces northeast. Vinification: about one month of maceration, aged in 25 hl oak casks, without new oak, for 24 months. Bottled without fining or filtration, without the addition of sulphites. Lengthy bottle-ageing in the winery's own cellars.
Stefano Bellotti
Stefano Bellotti was a living legend, Italy’s Pierre Overnoy if you will, settled since 1977 in the hills of Novi Ligure between Alexandrie and Gênes (Piedmont). Stefano was 18 years old when he inherited this family farm which comprised just one hectare of vines. And so, it was from almost nothing that Italy’s father of biodynamic viticulture got his start.
