Savagnin from organically farmed vines, naturally—planted on the marly soils of Pupillin and hand-harvested. The natural vinification process is kept under wraps, as the legend of Pierre Overnoy speaks volumes on its own. All we’ll say is this is a natural ouillé white wine (the barrels were topped-up all along the aging), aged in barrels for nearly 13 years, and bottled at the Domaine on May 11, 2023, without fining, filtration, or any added sulfites.
