Attention danger ! Complex Chardonnay which very quickly becomes addictive, with notes of quince, citrus fruits, honey, hazelnut, hint of fresh butter. The palate is also very expressive, with a beautiful volume and texture, long and luscious finish.
100% Chardonnay from organically farmed vines planted between 1962 and 2011 in the amphitheater of the Sauvagny lieu-dit, a large parcel. North and South exposure, clay, limestone, and marl soils from the Lias and Trias periods. Hand-harvested and naturally vinified, direct pressing, fermentation and aging in various vessels: concrete egg-shaped vat, large wooden vats, 500-liter and 228-liter barrels, without new oak. 18 months of aging, bottled at the estate with a small dose of sulfur.
Marin Fumey, a young purebred Jura winegrower, has always bathed in Vin Jaune! His parents Adeline and Raphaël founded the estate in 1986 with only 56 acres of vines.
