A 100% Chardonnay cuvée from vines farmed biodynamically and planted on a marl terroir. The grapes are picked by hand, of course, and the vinification is respectful of the grapes: direct pressing, fermentation and ageing in barrels that have seen several wines, for about two years. The wine is neither filtered nor fined, with zero added sulphur.
Tony Bornard
Tony Bornard is the son of the famous Jura figurehead Philippe Bornard , today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013.
