Jura
Spirale - 2018 - Stéphane Tissot
Domaine André et Mireille Tissot
A magnificent vin de paille, naturally very rich in sugar, with notes of raisins and honey. The palate is fluid, rich and complex. Uncommonly refined texture, and exceptional freshness considering the level of residual sugars (300 grams/liter)!

Sweet passerillé white wine: the method used was the same as for a vin de paille, but approval to label it as such was denied because the result has only 8% alcohol by volume. Biodynamically-grown grapes, hand-harvested at high ripeness, then dried for 5 months in an attic. This sweet liquoreux wine is made with partially fermented must from these dried grapes. 50 cl bottle
