100% Carignan, from old vines grown organically and planted at 400 metres altitude on schist soils. Harvesting is done by hand with small crates, controlled yields. In the winery, the grapes are destemmed then placed in vats for three weeks, soft pressing, followed by a maturation of 12 months in barrels that have seen several wines. Unfined, unfiltered, little sulphur.
