100% Carignan, from 60-year-old vines grown at the vineyard sites Le Rieu and Vitteroux. The estate is certified organic. Grapes are harvested by hand using small crates, and only in the morning. Vinification: carbonic maceration of whole bunches for 6 days. Grapes are pressed gently and slowly to preserve the fruit flavours and freshness of the Carignan, then matured 6 months in vats. Neither fined nor filtered, just a tiny bit of sulphur at bottling.

Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
