Umami - 2022 - Imogen Berry et Robin Althoff
Domaine Berry-Althoff
Tons of elegance for this sparkling wine with notes of pear and candied citrus. The palate is perfectly balanced, with the freshness of extra-brut, a slight salinity and a finish characteristic of the aging on lees.

A blend of 66% Muscat and 34% Grenache from biodynamically-managed vines planted on micaschist plots in Corneilla-la-Rivière in the Pyrénées Orientales, cultivated by Louise and Léo from Domaine Pouderoux. Hand-harvested and naturally vinified: direct pressing, settling, bottled with residual sugars to create effervescence in the bottle, 9 months of aging on laths, disgorged manually, then the wines are finally bottled with a crown cap without any additived. No fining, no filtration, no added sulfites.
