100% Melon de Bourgogne from 30 to 60-year-old vines grown organically, planted on a total of two hectares, with half Gabbro and half Gneiss soils, in the small town of Maisdon-sur-Sèvre. Harvested by hand in small crates, tiny yields of 15 hl/ha due to frost. Natural vinification: gentle pressing, fermentation and ageing on lees for 15 months. Bottled on the estate without fining or filtration, total SO2 only 14 mg/l.

Victor Cossy, child of the 1981 vintage, is the man behind Fermenterre, a small 3.22-hectare vineyard in Maisdon-sur-Sèvre, Muscadet.
