A blend of grape varieties: primarily Grolleau, Gamay and Côt, supplemented by Pineau d’Aunis, Pinot Noir, Chenin, Chasselas, Orbois, and Ugni Blanc… Local and forgotten grape varieties, from 70- to 80-year-old vines farmed biodynamically and planted on red flint clays. Harvested by hand on the 15th, 18th and 19th of September 2023. Direct pressing, short fermentation at low temperatures. Bottled in December 2023 with residual sugars, thus bubbles are naturally produced by secondary bottle fermentation. Disgorged in March 2024.
