100% Syrah from 65-year-old vines on average grown biodynamically, in a cool growing area, on a soil of highly decomposed granite soil known as "Gore" and loamy-clay. The parcel is situated on the vineyard site of Le Bois at the South-East peak of the Vallée du Coulet. Vinification: indigenous yeasts, 100% destemming, daily punching down of the cap or pump-over, fermentation for three weeks, and no “gory” chemicals. Élevage for 24 months in concrete tanks and tinajas made of terracotta of 10hl. Bottled after light filtering, 2gr/hl of sulphur.
