100% Syrah from organic vines planted on a soil of highly decomposed granite soil known as "Gore" and loamy-clay. The yields are 25 hl/ha. A selection of vines at the foot of the slope, sheltered from the Mistral, in the warm part of the appellation facing South and South-East. Harvest was done by hand. Natural vinification: indigenous yeasts, 75% whole bunches, low-temperature fermentation for three weeks, 24 months of aging in diamond-shaped concrete vats, without racking. Bottled after a light filtration, micro-dose of sulfur.
Matthieu Barret
Matthieu Barret has been making wine at Domaine du Coulet since 1998. It was Stéphane Tissot , one of Jura's most famous vignerons, who first gave Barret the nickname "Petit Ours Brun" (little brown bear), and it quickly caught on among his vigneron peers, and even found its way onto his wine labels, such as his red and white cuvées Petit Ours Brun and Petit Ours Blanc.
