50% Grenache Noir, 20% Mourvèdre, 20% Syrah and 10% Cinsault, from 40- to 50-year old vines, farmed on 4 contiguous hectares of Châteauneuvois terroir, with red clay and large pebbles. Viticulture: tilling of the soil, zero chemicals, natural grassing in the rows to help control vine yields (around 20 hl/ha). Natural vinification, with use of gravity in the winery. Each grape variety is fermented separately in vats for 25-day periods, with cap punching. Maturation for 12 months, 80% in vats on fine lees and 20% in barrels (1/3 new oak).
Stanislas Wallut
Stanislas Wallut stands alone today at the helm of this estate which he took over alongside the Roy de Blicquy family in 1993. An estate built from the ground up, 8.5 hectares located in the commune of Orange, in the northern part of the Châteauneuf-du-Pape appellation.
