100% Muscat d'Alexandrie, from old vines planted between 300 and 400 metres altitude on grey schist and red clay soils, surrounded by garrigue. The estate is certified organic and uses biodynamic farming techniques. Harvesting is done in the morning and by hand using small crates. Vinification: whole grape bunches are macerated 30 days, with indigenous yeasts, matured in demi-muid barrels for 6 months, with malolactic fermentation. Bottled without fining or filtration, zero sulphur added!
Tom Lubbe
Tom Lubbe hails from South Africa. In France, he was one of the finest students of Gérard Gauby , thanks to whom he met Nathalie, Gérard’s sister, with whom he settled in 2001 in Calce, in a still unspoilt environment, where they founded the Domaine Matassa. After starting out small, the estate would slowly grow in size. Tom would acquire old, high altitude parcels where he produces...
