A Savoyard wine in essence, tannic and slightly spicy, developing notes of black fruit, blackcurrant and blackberry. Still young and resolutely fruity, time will allow the notes of undergrowth and the roundness of the tannins to develop.
100% Mondeuse from organically farmed vines planted on the lower slopes of the mountain overlooking Chignin. Weeded, scratched and harvested by hand. Vinification: 50% de-stemming, 10 days of maceration, gentle pressing, 12 months of ageing, 70% in vats and 30% in demi-muids that have seen several wines. Bottled at the estate in accordance with the lunar phases, without fining or filtration, just a micro-dose of sulphur.
