A nose of white fruits, candied fruits, dried apricot, and quince paste... Juicy, fresh and light on the palate, with zero heaviness, and lovely mineral and bitter notes on the finish which balance the whole.

100% Pinot Gris, from young, 5-year-old vines cultivated biodynamically and planted on glacial moraine, sandstone molasse and yellow clay soils, facing west. The grapes are harvested by hand in two passes, with low yields. Vinification: gentle pressing, fermentation at 16°C, seven months of maturation in cement eggs and 500-litre demi-muid barrels that have seen several wines. Bottled at the estate with a light diatomaceous earth filtration. 914 bottles produced.
