100% Roussanne from biodynamically-grown vines planted on the South-facing plot beneath the chapel of St-Anthelme in Chignin, as well as the finest grapes from the "La Perette" plot, planted on a South-Western slope. Hand-harvested, the whole bunches are pressed directly, one year of aging, 80% in old oak barrels and 20% in vats, then blended for 6 months in vats. Unfined and unfiltered, bottled with just a micro-dose of sulfur.
