100% Mauzac from organic vines planted on a South-facing limestone plateau, harvested by hand using small crates. Vinification: direct pressing, fermentation starts in stainless steel tanks, then the juice is bottled two weeks later with residual sugars in order to create effervescence in the bottle. The wine is then aged on lees, on laths, with bottle stirring. Disgorged by hand, neither fined nor filtered, micro-dose of sulfur.
