Aromas of pear, white peach, citrus, and exotic fruits fill the nose. On the palate, it’s a delightful treat with fine, light bubbles and fruity notes, leading to a long finish with a hint of florals. Is it so good we dream about it at night, possibly sleepwalking to get more? Perhaps!

Sauvignon, Chardonnay, Sémillon, Petit Manseng, Gros Manseng, and Muscat of Alexandria, sourced from an average of 20-year-old vines farmed organically and planted across several plots with clay-limestone soils. Handpicked grapes and natural winemaking: direct pressing, part of the harvest was destemmed, fermentation in stainless steel tanks, concrete tanks, and barrels. Bottled with residual sugars to create in-bottle effervescence. Aged on laths for 6 months; unfined, unfiltered, just a micro-dose of sulphur.

Fabien Jouves represents the golden generation of Cahors. This young and dynamic vigneron settled in 2006 on the highest slopes of Cahors, where he took over his family’s estate of 20 hectares.
