The Lambics of the Cantillon Brewery are called « young » after one year of aging and reach their full maturity after three years. The young beers contain the natural sugars necessary for the secondary fermentation in the bottle. The three years old beers bring their bouquet and their finesse.
Barbera: a spontaneously fermented beer, created in collaboration with the legendary Cascina degli Ulivi estate in Piedmont, Italy—founded by Stefano Bellotti and now run by his daughter Ilaria Bellotti, well known to JUS'tos! A blend of two-year-old lambics with Barbera pomace and lees from the estate. Bottled at Brasserie Cantillon on December 5, 2023. Ingredients: water, wheat, barley malt, hops, grape pomace.
