The Lambics of the Cantillon Brewery are called « young » after one year of aging and reach their full maturity after three years. The young beers contain the natural sugars necessary for the second fermentation in the bottle. The three years old beers bring their bouquet and their finesse.
Fou’ Foune : spontaneous fermentation beer, blend of 18 to 20 months old Lambics with Bergeron apricots from the Rhone valley, cultivated by François Daronnat. 300 grams of fruit per liter of beer, five weeks of maceration of the fruit in the juice !
