100% Chenin from organically farmed vines planted on schist soils at Domaine du Verger in Faye d'Anjou, Loire Valley. Hand-harvested and naturally vinified: direct press, transferred to barrel for fermentation and 8 months of aging in oak barrels that have seen three wines already, all in the alternative Darwin cellar on Bordeaux’s Right Bank. Bottled without fining or filtration, just a micro-dose of sulfites.
