A blended cuvée of 65% Malbec and 35% Merlot, from organic vines grown by Laurent Cassy and Sylvain Destrieu, respectively at Château Chillac (Entre-deux-Mers) and Clos de la Molénie in Ruch. Harvested by hand, natural vinification in the urban winery at Darwin, the alternative space of Bordeaux's right bank. Native yeasts, 6 months of aging in stainless steel vats before bottling without fining or filtration, with just a micro-dose of sulphur to protect the wine (total SO2: 20 mg/liter).
