100% Cabernet Sauvignon from 25-year-old vines, organically farmed just meters away from Mouton-Rothschild's parcels... Pure class! Hand-harvested, with natural, additive-free winemaking: a short 3-4 day maceration for a touch of color and texture, gentle pressing, fermentation starts in tanks, then bottled with residual sugars to create its natural sparkle. Aged on laths, disgorged but neither fined nor filtered, no added sulfites.
Osamu Uchida
Osamu Uchida, born of the 1977 vintage, grew up in Hiroshima but was educated in French culture from a very young age – his parents were wine merchants! He was barely in his twenties when he decided to head off to the land of Molière to immerse himself in French language… and wine! By the end of his first stay, it was the welcome he’d received from the many vignerons he visited that convinced...
