Blend of Riesling, Chasselas, and Sylvaner, sourced from old vines in massal selection, planted between 1923 and 1943 on clay-limestone and marl-limestone terroirs. Biodynamic farming and manual harvesting. Vinification: direct pressing, co-fermentation of the three grape varieties together, 12 months aging on lees in casks that have seen several wines. Bottled on September 29, 2024, without fining nor filtration, just a micro-dose of sulphur (added during pressing).
JÉRÔME FRANÇOIS
Jérôme François settled in Ostheim in 2014. The young carpenter couldn’t resist the call of the vine and started his estate with a few plots from his grandfather and the barn of his great uncle! Late 2017, Jérôme teamed up with Yann Bury. The man grows his vines biodynamically, and works the soil not with a tractor but with two horses, Sirus and Fastochex. A flock of black Ouessant sheep...
