A blend of 70% Muscat Ottonel and 30% Muscat d'Alsace, made from vines grown biodynamically, certified by Ecocert and Demeter, and planted on the Clos des Capucins, a flat terroir at the entrance of the valley, protected from the winds by the surrounding hills. Gravel, sandy-loam soils on pebbles. Manual harvest, respectful vinification of the grape: total destemming, short cold maceration on skins, indigenous yeasts, gentle pressing in order to preserve the fruit, fermentation and aging for 10 months on fine lees in old casks.
