Pinot Gris from vines grown biodynamically and planted on sandy-silty soils over gravel and granite pebbles. Certified organic by Ecocert and biodynamic by Demeter. The Clos des Capucins is a vineyard site situated at the bottom of the slope, well protected from the wind by the surrounding hills. The grape bunches were harvested by hand when ripe. Respectful vinification: slow and gentle pressing of the whole clusters, indigenous yeasts, maturation on fine lees for 10 months in large and old wooden casks, without stirring.
