This 100% Riesling wine is made from 65-year-old vines farmed biodynamically and planted on shallow soils of granitic rock and sand on the upper part of the Schlossberg hillside. The grapes were harvested by hand when very ripe, around November 25th, the day of Saint Catherine! Gentle pressing, fermentation with indigenous yeasts, and maturation on fine lees for 10 months in large casks, without stirring.
