100% Chardonnay from 50-year-old biodynamic vines planted at an altitude of 450 metres on a one-hectare plot that Emmanuel has been cultivating since 2021. The plot is right on the border between granitic arena and volcanic rock, making it a very interesting terroir. Harvested by hand and vinified naturally: direct pressing, aged for 11 months, partly in barrels and partly in vats, blending at the end of the ageing process. Neither fined nor filtered, just a micro-dose of sulphur (1 gr/hl) at bottling on the estate, in July 2024.
