100% Gamay from 30 year-old vines grown in conversion to organic farming, planted on granite and sandy soils. Manual harvest, yields of 40 hl/ha. Natural vinification: indigenous yeasts, two weeks of maceration in whole bunches, soft pressing, 8 months of maturation in vats. Neither fined nor filtered, no added sulfites.
