A cuvée produced from the purchase of grapes, 100% Gamay from vines grown organically and harvested by hand. Vinification in whole bunches, semi-carbonic maceration, soft pressing, one year of aging in barrels that have seen several wines, racking, then blending of the barrels in enamelled vats for a few additional months of maturation. Bottled at the Estate in December 2023 without fining or filtration, just a micro-dose of sulphur.
Julien Guillot
Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001.
