Emmanuel Houillon and Pierre Overnoy
Emmanuel Houillon took over the domain of Pierre Overnoy, the Holy Grail of natural wine—a bottle every natural wine lover dreams of tasting someday. Pierre, a guiding figure of the Jura and a true pioneer, reclaimed the 3-hectare family estate in 1968. In 1984, he boldly ventured into sulfur-free winemaking—a choice that would earn him the title of ‘pope’ or ‘guru’ of natural wine. Even after 80 years, he remains close to his vines, continuing to guide Emmanuel, who joined the estate in 1990 and took the reins in 2001. Under Emmanuel’s lead, the vineyard now spans 7 hectares, yet the philosophy remains unchanged: pure, uncompromising wines of remarkable integrity. Here, each vintage is a challenge; only 20,000 bottles are produced in good years, testament to a meticulous craft and steadfast loyalty to Pupillin’s terroir. Savagnin, Poulsard, Chardonnay...
